- Quinoa, 1 cup
- Chicken, 2-4 breasts
- Cilantro, 1 cup
- BBQ sauce, 1/2 cup
- Avocado, 1 small
- Corn, 1 can
- Black Beans, 1 can
- Shredded Mozzarella cheese (dairy free)
Bake 2-4 chicken breasts in oven at 450 degrees for 25-35 minutes. Once bakes, using 2 forks, shred the chicken. Add 1 can corn, 1 can black beans. Bake for another 5 minutes.
Cook quinoa separately. We have a rice maker that we use and love to make our quinoa. Once done throw the quinoa into the chicken, corn, and beans pan. Mix together. Top with BBZ sauce, mix. Dish onto plates and top with cilantro, Avocado and Mozzarella cheese.
Get ready to drool and come back for 2nd’s… which is always why I usually do 4 chicken breasts instead of 2. And makes for good leftovers too!
