Stuffed Chicken with Sweet Potatoes:
- Chicken Breasts
- Fig and Goat Cheese
- Pitted Dates
- Sweet Potatoes
- Salt, Pepper
- Olive Oil
For 2 chicken breasts make a slit in the middle of the chicken breasts to be able to stuff the goodies inside. Cut up 10 (or so) dates into tiny pieces, toss them in a bowl. Add the fig and goat cheese into the bowl, and mush up with a spatula. Then stuff the chicken breast with the cheese and dates concoction.
Head the oven to 400 degrees.
Dice up the sweet potatoes and place on one side of the pan, sprinkle olive oil, salt and pepper on top of potatoes.
Place the stuffed chicken breasts onto the same pan on the other side, not touching.
Bake in the oven for 25-30 minutes.
Dice up and mix together once done!
