Is there anything better than Apple Cinnamon Oatmeal Cookies in the fall or any other season for that matter? I don’t think so.

Well, unless you are baking sugar cookies or peanut butter chocolate chip ones, but that’s up for a proper debate! Those are definitely worthy competitors!

Fall of 2023 truly didn’t disappoint. We took our girls to several apple orchards and I was determined to make some fun things with my hand-picked apples. 

You might remember last October right before I had a baby, I shared a recipe of the yummiest apple stuffed acorn squash. If you ask me and I am completely honest with you, it is a dessert, but since we are incorporating squash and apples, I just tend to think about it as an appetizer. 

The apple cinnamon oatmeal cookies I am about to share with you are flavorful, chewy and delicious. And cinnamon and vanilla just close the deal!

I have a friend who adds nutmeg to intensify the fall flavors so you could try that if you are a spices connoisseur.

Are you ready to start? Here is what you will need for these apple cinnamon oatmeal cookies!

Ingredients: 

10 Tbsp butter (room temperature) 
1 1/2 cup sugar
2 large eggs 
2 cups flour
1 tsp baking powder 
1 tsp cinnamon 
1 tsp vanilla
2 apples (cored and cubed)
1/2 cup raisins
2 cups old-fashioned oats (don’t use quick oats) 
1/2 cup chopped walnuts (optional) 

Instructions:

1.Preheat oven to 350°F  and line two large baking sheets with parchment paper. Set aside. (Some of you may wonder why use parchment paper for baking cookies. The answer is simple: it will allow for them to bake more evenly, the non-stick quality will help prevent them from cracking or crumbling when removing them from the sheet.)

2. Beat butter and sugar together with an electric mixer, add vanilla and one egg at a time.

3. In a large bowl mix the oats, flour, baking powder and cinnamon.

4. Pour the wet ingredients into the dry ingredients and combine. Fold in the apples and raisins.

5. Using a table spoon or an ice-cream scoop, scoop cookie dough into balls and place 2-3 inches apart on your lined sheet. Slightly flatten the balls out to help them spread!

6. Bake for 18 minutes or until lightly browned and set on the edges. Remove from the oven and allow to cool for 15 minutes on the cookie sheet before removing.

Serve with tea or apple cider or, some people would argue, with a scoop of vanilla ice cream.

These apple cinnamon oatmeal cookies taste the best on the same day you make them, but you can store them for up to three days.
